Lentils and rice

That's whats for dinner tonight. Frugal and nutritious. On the stove as I type. Recipe follows...

3/4 cup dry lentils
3/4 cup brown rice
4 chicken bouillon cubes (didn't use that much. not a big fan of salt)
2 tablespoons dry onion ( didn't have any so use fresh)
1 tablespoon onion powder
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1/2 teaspoon basil
4 cups water
2 tablespoons oil

Bring water and oil t a boil. Add everything else. bring to boil again. reduce heat to low. Cover and simmer 45 - 50 minutes. The water will mostly be absorbed. Top with a little shreaded cheese and serve!



On another note a family member was in a car accident last week. Not their fault. They are fine but car isn't. Dealing with insurance people presently. Smooth sailing so far. Adjuster is supposed to call today so we can get the ball rolling with the repairs.

    We had lentil soup last night, made in the crockpot. I do one bag lentils, 8 cups water, one full onion, three stalks of celerty, six-seven medium carrots (all veggies cut into large pieces). The above cook for three hours on high, the last hour I turn it to low and add one can of diced tomatoes and a splash of vinegar. Very yummy!

    Sorry to hear about the car wreck, but glad your loved one is OK. Smile

    I love lentils and love them just about any way I can get them. I occasionally have them with wild rice and I'll give this recipe a try. Thanks!

    CCF, I'll have to dig out my Tightwad Gazette. I haven't had it out for awhile. Time for a review. I actually got this recipe from the Hillbilly Housewife website. Many back to basics recipes there.

    Update on recipe...turned out pretty good. I cooked a little longer than the recipe states because some lentils weren't as soft as I would like. There is a fine line tho as it started to stick to the bottom of the pan.

    Hope this is good enough. The hubby likes meat in all his meals. hahaha.

    Try a drizzle of yogurt on top of your lentils. Nice contrast in taste and texture. Very authentic to parts of the world that eat lentils daily.

    Joan that sound great except I don't have any yougurt at this time. I'll be sure to try it next time. Thanks for the suggestion. I was also thinking some canned fire roasted tomatoes would be a good addition also.

    Hmmm, the legume bug must be going around! We just had lentils and roasted eggplant slices the other night. Yum! And yes, they are delicious with (plain) yogurt on them. I like lentils because they are a great source of protein, they don't lead to a big expense on the food budget, and they are tasty. It's nice to have some insurance of a good, veggie source of protein in addition to any animal sources, I think.
